2015 Rucksack Seco Pairing–Chorizo Mac-n-Cheese with Chimichurri
Our next Zoom Pop-up is going to be a Zoom Dinner Pop-up where we all have the chance to make the same recipe and enjoy the same wine at the same time! For this pop-up, we’ll be pairing the 2015 Rucksack Cellars’ Seco (Dry Portuguese Blend).
If you’ve been following this, our Madroña crew has enjoyed a couple of dinners with each of us bringing different dishes to pair with the ’15 Seco. We’ve experimented with Corn and Cauliflower Tacos (with Feta), Portugues Pork Stew, Mushroom Wellington, Mushroom Raviolis and Chimichurri sauce on Chicken for the first dinner. The Chimichurri sauce was the easy winner.
The next dinner paired with the Seco was all about Chimichurri sauce. So London Broil marinated in Chimichurri, grilled Portobellos marinated in Chimichurri, Black Bean and Corn tacos with Chimichurri, Roasted Potatoes with Chimichurri, Potatoes and Sausage (without Chimichurri); and in all we had three different Chimichurri sauces with each one.
In the end, the winning recipe was something truly simple. It’s Annie’s Penne Mac-n-Cheese with Mexican Chorizo, smoked Paprika and Chimichurri sauce. Easy, peasy (although no peas). If you need the Seco, stop by the winery soon (as we’re down to the last 2 cases in existence!).
